Reindeer milk contains little water (67.3%). The fat content is 18.1% six times higher than that of cow's milk. The total protein content is 10.5%. At 1.5%, the milk sugar content is three times lower than in cow's milk. The ingredients are adapted to the high energy requirements of the calves. The high fat and protein levels guarantee a rapid growth of the calves, which have to be self-contained hours after birth to follow the herd.

Reindeer milk tastes sweet and looks like melted ice because of the high fat content. The creamy consistency is reminiscent of condensed milk, but the content of protein is much higher. The thickish texture is reminiscent of soft, mixed with sugar butter.
